Charlie Chocolate Bites
Take another step in eliminating sugar from your diet!

One of the missions of The Charlie Foundation is to educate people with epilepsy to follow a sugar-free diet. The positive effects of removing sugar from your diet can be monumental. Sugar and foods with added sugar cause your blood glucose level to rise rapidly. Constant rises in blood sugar can lead to pre-diabetes and other endocrine disorders and may even trigger seizures. Removing sugar can lower glucose levels to normal levels and improve your health. The Charlie Foundation advises making gradual changes toward a sugar-free diet so that you will develop a life-long habit of healthy eating.

If you are looking for a guilt-free, truly low-carb snack to replace your high-sugar granola bar, try the Charlie Bar! It’s one of the lowest-carb bars on the market. Due to popular demand, Chef Dawn Martenz has created the following recipe to add a chocolate layer to the Charlie Bar.

    • 8 gm Fat
    • 1.3 gm Carbohydrates

  • 1 Charlie Bar, cut into 4 equal pieces
  • 7 grams (1/2 Tablespoon) coconut oil, melted
  • 7 grams (1/2 Tablespoon) butter, melted
  • 1 gram (1/2 teaspoon) unsweetened cocoa powder
  • Optional: a few drops of liquid stevia

  1. In a very small bowl, combine the butter and coconut oil. Stir the melted fats together until combined.
  2. Add the cocoa powder and liquid stevia (if using) to the melted fats and stir until dissolved. The mixture will be very thin. To thicken the mixture slightly, place the bowl in the freezer for 30 second intervals at a time. Stir the mixture and return to the freezer, repeating the process (of 30 seconds in the freezer and stirring) until it reaches the consistency of pancake syrup.
  3. Pour 1/4 of the mixture, about 3.75 grams, into 4 small silicone molds or onto waxed paper cut in a circles to fit into 4 muffin tin pockets. Place 1/4 of the Charlie Bar on top of the chocolate mixture. Allow the chocolate to harden in the refrigerator. Once the chocolate has hardened, remove the pieces and serve. Store in the refrigerator until ready to enjoy!
